Speaking of grilled cheese, mine are a bit more complicated than the answers provided.
I butter both slices of bread, season those with garlic, oregano, and a bit of cayenne pepper (not too much), then I take Queso Oaxaca, Irish Sharp Cheddar, or just american cheese, with a slice of tomato. I assemble the sandwich, pass it over a ripping hot pan, and the grilled cheese comes out tasty. It takes like 5 minutes, no joke.

No butter, full fat cheese. Depending upon my mood either Morbier, swiss cheese, brie, Dana blue, old cheese, or jong belegen. (See explanation)

I'll add basil, oregano, pesto, tomato, chorizo, salami, ham, sucuk, raw ham, avocado or what ever is in my pantry.
I serve with sweet chilli sauce, ketchup, mayonnaise, Korean fermented chilli sauce.
