Kukido

Where the Wild Things Are is steeped in culture (almost all of it imported). The ancient art of kukido is one of the most respected. Here, some of the secrets are revealed.

Choc-chip and Fudge Cookies

Makes about 30 cookies.

225g butter
250g granulated sugar
50g dark brown sugar
1.5 tsp vanilla essence
0.5 tsp lemon juice

325g plain flour
1 tsp salt
0.25 tsp ground cinnamon
1 egg

250g choc chips
300g fudge bits

Preheat oven to 180°c.
Melt the butter.
Mix in the sugars, vanilla and lemon until smooth.
Mix in flour, salt, cinnamon and the egg.
Mix in choc-chips and fudge pieces.
Spoon the mixture onto a baking sheet, keeping the cookies about 5cm / 2” apart.
Check the oven after ten minutes. As soon as the edges of the cookies start going brown, take them out. Cool them on a rack.

The fudge helps make the cookies chewy. If you switch the fudge for something else, then switch some of the granulated sugar for brown sugar.
